
It's not everyday it snows in the Hawke's Bay,
so we downed tools and went in search of the white powdery stuff!

On the way home we collected some watercress from the stream
that ran through the snowy hills,
which inspired the dish below
Recipe:
Cured salmon on Bruschetta
Cured Salmon
lightly fried toast of your choice
Watercress
Fennel bulb thinly sliced
Lemon segments
Dressing
Blend watercress with unsweetened coconut yogurt, pepper and pinch of salt
Garnish
with a little fennel and fried Kawakawa leaf
